Coconut Cake
This cake is so heavenly. If you were able to come to our launch party back in January, you would have tasted this cake and agreed- it is absolutely delicious. It is moist and full of flavour. Please do try it out!
Ingredients
Batter:
- 2 cups flour
- 2 cups sugar
- 1/2 cup butter
- 1/2 cup shortening
- 1 cup water
- 1/2 cup buttermilk
- 1/2 tsp baking soda
- 2 eggs
- 1 tsp vanilla
- 1 tsp coconut extract
- 1/4 unsweetened shredded coconut
Icing:
- 1/2 cup butter
- 6 tbsp milk
- 16 oz powdered sugar
- 1 tsp coconut extract
Instructions
- Preheat oven to 400F.
- Grease two round 9 inch pans. Mix flour and sugar.
- Combine butter, shortening and water and bring to a boil. Add to flour mixture.
- Add buttermilk, baking soda, eggs (In that order. Mix thoroughly in-between each addition).
- Stir in vanilla and coconut extract.
- Add to pans and bake for 20-30 minutes or until toothpick comes out clean.
- For icing, bring butter and milk to a boil. Remove from heat and add sugar and coconut extract.
- Poke holes with fork on cake and while still hot, pour icing mixture over the cake.
- Add shredded coconut over top of cakes.
- Let cool completely. Remove from pans, cut and serve.
